Sister’s Ham and Cheese Salad

Honey, this is the best salad you will ever put your mouth to. It just makes my mouth water to think about it. Now, to tell you the truth, I do make it myself sometimes when I just can't get Sister to do it for me, but I say Sister. Sister, I say, will you make me a big bowl of your good old ham and cheese salad? Pretty please with a cherry on top I whine. And child, sometimes she will out of the goodness of her heart. And sometimes she gives me one of them old go to hell looks and says, Sister you stop that silly whining and act like you got some sense.

Sister’s family loves her ham and cheese salad and it is good, child. I’ll tell you the truth. I could eat a whole bowl of it myself if I ever got to the table fast enough. By the time all them kids of sisters gets a bow full there’s not an awful lot left. Them kids can eat. You wouldn’t believe how much they can put away. If you have a bunch of kids at your house, you might want to double sister’s recipe. In fact I think sister triples it. You can’t have too much of a good thing.

Sisters Ham and Cheese Salad

Ingredients:

1(15ounce)can black beans, drained and rinsed.

6 ounces ham cut into 1/2 inch strips

4 ounces cheese cubes, whatever you like

1/4 cup mayonnaise

1/4 cup salsa

2 scallions chopped

1 large Bibb lettuce washed and dried thoroughly.

In a large bowl, mix together the beans, ham, cheese cubes, mayonnaise, salsa. and scallions.

Cover and refrigerate at least an hour.

Arrange the Bibb lettuce onto four plates, and spoon about 3/4 cup of bean and ham mixture into each.
