Malaysian love to barbecue chicken wings. Any barbecue without chicken wings on the menu will not be complete. There are a lot of variety to prepared chicken wing.
My favorite way and yet the simplest way to prepared chicken wings is by marinade with chili sauces and oyster sauces. Besides the sauces, I also use shallot, garlic and lemon grass. Add some salt for taste. Leave the chicken wings marinaded for at least 4 hours so that the chicken will absorb the taste and fragrance of the marinade. The longer the time the better the taste will be.
After the chicken being marinaded long enough, it’s time to prepare the grill for barbecue. I like to use charcoal as the fuel for grilling. I usually use grill without hood. Fire the charcoal and make sure it is red hot. Once the charcoal ready, spread the charcoal evenly inside the grill. This is to ensure the chicken wings will cook evenly and it will be easier to control.
Chicken wings can now be put on the grill. When grilling the wings, ensure to really spread the wings because it will make the wings cook evenly on all side. During arranging the wings at the grill, space the chicken evenly. Usually chicken will take about 10-20 minutes to cook depend on the on the heat of the charcoal. The chicken wings will be ready once it is brownish in colour.
