This recipe for Shephard’s Pie (a.k.a. Cottage’s pie to some) is simple, delicious and very inexpensive to make. There are several variations on Shephards Pie however I’m a little picky and am not a fan of peas or mushrooms.

Ingredients you will Need:
1 lb medium ground beef
1 small Spanish onion
1 can peaches and cream corn
3-4 large white potatoes (can use yellow potatoes)
butter
salt & pepper
milk

Peel and chop potatoes and boil in salted water. When potatoes are nearly cooked pre-heat oven to 350 F and brown ground beef, when nearly completely browned add chopped onion. Put meat aside and mash potatoes with milk and butter. I like to use a potatoe masher instead of an electric beater, as I like a thicker consistency. Use a glass dish and layer meat/onion on the bottom, next sprinkle corn evenly and top with mash potatoes. I add salt, pepper and dallops of butter on top. Cook uncovered for about 30 minutes until peaks of mashed potatoes are just starting to turn golden brown. Let cool and serve.

I find this recipe easily doubles so my family eats it for two nights and I get a night off from cooking.
