Do you have left over chicken or turkey and are just tired of the same old reheated or sandwich meal? Well look no further. A few veggies and some lettuce will put a wildly delicious spin on the leftovers.
Ingredients Needed:
Lettuce (iceberg or romaine)
Tomatoes
Cheese
Onions
½ Lime or lemon
Brown sugar
Butter
Ranch or other creamy dressing
Optional ingredients:
Green or red bell pepper
Cucumber
Any other veggie on hand
Cut or rip the desired amount of lettuce, tomatoes, onions and other vegetables and place in a bowl. Shred desired amount of cheese over top. Take the amount of chicken you want to use and cut it up or shred it into manageable pieces. Heat up a pan on medium heat with a bit a teaspoon of butter (to prevent sticking) and melt it. Once the butter starts to bubble, throw in the chicken. Toss the chicken. Add lime or lemon juice to the pan over the chicken and let cook for 2 minutes. Sprinkle brown sugar over the chicken, enough to coat all pieces. Keep a close eye and keep moving the chicken around so the brown sugar melts and caramelizes on the chicken. Cook for approximately 3 minutes. Once cooked, put on top of all the vegetable (your salad). Finish it off by drizzling your favourite creamy dressing over the top, the quantity is up to you.
To make this versatile recipe even tastier, you may want to add your favourite spice to the chicken after the lime/lemon juice. This will add that extra “sweet with heat” flavour people like so much. This recipe can also be used with leftover ground beef and makes an excellent taco salad. The great thing about this salad is its versatility and provides a great alternative to consuming delicious vegetables and using leftovers!
