These are two fast and easy recipes. I first learned of the egg in the nest recipe through the Girl scouts. My mother gave me to tuna casserole recipe.

Tuna Casorole

1 large can chow Mein noodles
2 cans tuna drained
1 can cream of mushroom soup
1/2 to 1 stalk chopped celery
1 small can mushrooms
1/8 to 1/4 cup peas
Mix chow Mein noodles, tuna, and mushroom soup in a bowl.
Chop celery and add to bowl and mix.
Put mixture in a pan sprayed with cooking spray.
Put in 350 oven for 20 minutes or until chow Mein noodles are soft.
You can also put it in the microwave for 10 minutes.

Egg in the Nest

2 Eggs
2 slices of bread
4-6 slices of bacon

Fry bacon and set aside, or cook bacon in a separate pan while making egg dish.
Melt 3 tbs. margarine in a frying pan.
Put a hole in the middle of 2 slices of bread.
Place bread in heated frying pan.
Crack eggs in the middle of the
bread.

Cook eggs and bread on both sides. You can have the eggs soft or well done, whichever way you prefer. Make sure the whites in the eggs are all the way done. Put the bacon on top of the egg and bread.
