For the Ingredients, you will need:
One pound of blanched tomatoes(deskinned and deseeded!)
1 tsp each of oregano,basil and black pepper powder
5 cloves
2 flakes of garlic minced
1 tsp sugar
1 tbsp tomato ketchup
2 cups of water (warm)
2 tbsp olive oil
Salt as per taste
200 grams roasted tofu chunks or strips
For the preparation:
Chop the tomatoes as finely as you can. Heat oil, add garlic, cloves, tomatoes, herbs and pepper. Bring sauce to boil. Add ketchup, sugar, and salt. Lower the flame and stir continuously till the sauce thickens. It should take about 20 to 30 minutes.
Pour the prepared sauce over roasted chunks or strips of tofu. Sprinkle over the tofu and bolognese sauce mixture a generous helping of grated cheddar! Or any other cheese that you like! Garnish with fresh basil and serve.
If you are non-vegetarian and like your meat(like I do!) then you could try the above recipe substituting lean steak mince with tofu. What I do is: use half and half, meaning 100 grams of tofu with 100 grams of mince.
Adding cheese will enhance the tast of most Italian dishes. So we you aren't watching calories(like me) go ahead and add a generous helping of grated cheddar over either the vetarian or non vegetarian bolognaise.
