Recipe for tastiest Pepper Chicken Dish Chicken
1/2 kg –Chicken (Small version) skinned, washed and cut in small pieces
1 large onion –chopped roughly (optional)
½ tbs turmeric powder
1 tsp pepper powder
4 pods of garlic -chopped
½ tsp cumin seeds
1 strand of curry leaves
½ cup ghee (clarified butter)
Wash chicken cut pieces veru in little bit of turmeric and set aside for a few minutes before placing in a pre-heated pan on medium flame. Drop in the chicken pieces, turmeric powder, salt and 1 cup of water and allow to cook well till chicken is soft and water completely evaporates. Remove and keep aside.
Heat pan with ghee (Clarified Butter) on low flame and throw in a sprig of fresh nice smelling curry leaves, add cumin seeds, add pepper powder and roughly chopped onions, stir fry well. Add the soft cooked chicken and allow cooking for another few minutes until pepper powder and other add on ingredients stick to the chicken, check for salt proportion, add if necessary only.
Garnish well with freshly plucked coriander leaves and a squeeze in a full lemon juice if required for that rich taste. Serve piping hot!
Hot Tip! Don’t put salt in water until it comes to a boil –Salt water has a very high boiling point.
