Nameless Mushroom Recipe
Mushrooms?
How does a Recipe sound when one does’nt like to eat the main ingredient cooked in it?
Well,Mushrooms,the tiny trees are never my favourite,but in order to benefit the goodness that they carry,i have come out with my secret. I cook them with a dash of Nigella Seeds.
To make Nameless Mushroom Recipe,you’ll need
2 Big Sized Mushrooms(Diced into medium size chunks)
1 Medium sized Onion(chopped)
2 Medium Tomatoes
4 Cloves of Garlic
2″ piece of Ginger
1 pinch of Nigella Seeds(kalonji Seeds)
1 tsp of Cumin Seeds
A good handful leaves of fresh Coriander
2 Green Chillies
1 tbsp of Coconut Paste or Cashewnut Paste
1 tsp of red chilli powder/black pepper powder
2 tbsp of Cooking Oil
Salt to please ur taste
1.5 tbsp of Water
Instructions: Wash the mushrooms and cut them into square chunks of desired size,i prefer to cut them in squares.
Grind ginger,garlic,green chillies,coriander and Tomatoes to form a paste in a food processor or a mixer.
Now spoon the cooking oil into a pan,turn the hob on,add a dash of Nigella seeds(to keep away the muddy smell of mushroom),followed by cumin seeds and allow them to crackle,then add the chopped onion,wait for them to turn translucent,then sloop the ground paste into the pan and boil the contents for few mins until the oil seperates/leaves the contents( as the chefs say),then add chilli/black pepper powder, and slip in the mushroom chunks with salt and simmer with the lid on,after 2-3 mins spoon the coconut paste or cashew paste and add the water and cook until the mushrooms are done.
Garnish with Cilantro/Parsley/Coriander.
Its ready. Bon-Appetite!
How to serve? Well, i prefer this with Tortillas and even with Cooked Saffron Basmati Rice.
