Tofu or Soya Cheese, is an important component in Japanese and South-east Asian cuisine, it has become popular in the West too on account of it's high protein and nutritional content. Tofu is made by coagulating soyamilk with a coagulant or lemon juice. It is low in calorie and high in nutritional content.

Tofu has a subtle taste and absorbs the flavours of other ingredients, making it easy to use in a variety of recipes: Indian, Chinese, Italian, and Continental.

When I was first introduced to tofu, I can't honestly say I liked it(actually, come to think of it, Tofu hardly has any taste to like or not like!!It's really, quite nearly, tasteless!). And then during my weight loss program, some years ago, I started eating a lot of tofu(for it's low cal and rich protein content). In course of time, I learnt to adapt it into several of my favourite recipes. And now, I love TOFU.
