How to make chili paste?
100 g chili flakes
200 ml oil
½ tsp ginger and garlic
1 onion
5 leaves curry leaves
2 green chilies
1 limes juice
5 tbsp sugar
1tsp of ajino moto
Optional:
(Small dried prawns or dried Maldive fish 100 g)
Dissolve the sugar in the lime juice. Heat the oil add the onion, green chili, ginger garlic curry leaves , (then add the dried fish or dried prawns then) then add the chili flakes and turn in well in the pan and turn off the fire. Then add the dissolved sugar and the ajino moto and mix well.
After the Chinese chili paste warms up, put in an air light bottle. Store for a week before use.
