Chicken Francese is a great breaded chicken entree that can usually be found in Italian restaurants. It typically is a really rich and unfortunately unhealthy meal, but for this recipe I changed things around a little bit to make it slightly healthier, without sacrificing taste.
You can cook some pasta tossed with garlic and olive oil to make this a complete meal. Definitely think you will enjoy this!

Yields: 4 Servings
Ingredients
(4) 1/4 lb Chicken Breasts
1/2 cup All Purpose Flour
2 Eggs
1 Juiced Lemon
1/2 thinly sliced Lemon
1/3 cup White Whine
1 cup fat free Chicken Broth
Cooking Spray
Salt
Pepper
3 Tablespoons Chopped Parsley
2 Tablespoons Butter
Put the chicken breasts on a flat surface. Cover with plastic wrap and flatten until they are 1/4 thick.
Season chicken with salt and pepper.
Beat eggs in one bowl. Pour the flour into another bowl.
Heat large pan over medium heat and lightly coat bottom of pan with cooking spray.
Dab both sides of each chicken breast in flour and then the egg mixture and place in frying pan.
Fry chicken breast 2-3 minutes on each side or until brown. Transfer onto a plate.
Add the lemon juice and slices, parsley, white whine,butter, and a pinch of flour into the pan and simmer on low heat for 2-3 minutes until it thickens slightly.
Turn off heat and transfer chicken breasts into the pan mixture briefly to soak up sauce.
Serve chicken with sauce lightly drizzled on top and enjoy!
