I love macaroni and cheese and have had a hard time finding a recipe that was both simple and delicious. The first time I attempted to make it the recipe was too complicated,  I somehow solidified the cheese while cooking it – it was inedible unless you were my college friend who had two plates. I found a recipe for great macaroni and cheese and modified it to make it even simpler. 

1 - 500g brick old (or medium) cheddar cheese – I use Black Diamond or Cracker Barrel (but any kind should work)
1 pkg of your favourite pasta noodles (I personally like baby shells but you can use traditional macaroni noodles)
milk
salt & pepper

Grate 1/4 of the brick (or shred using food processor) and reserve for garnish. Grate 2/4 of the brick and add about 1/3 a cup of milk and process in food processor (or you can use an immersion blender) cook pasta according to package directions (making sure you do not overcook) once cooked strain and return to pot add cheese/milk mixture and salt and pepper to taste, and continue cooking on low heat for 5 minutes. Serve and add remaining shredded cheese as garnish. Hope you enjoy!
