If you are looking for a quick and easy menu idea that is perfect for summer, but don’t want a hot meal, then this shrimp cocktail is for you. It is so simple and you can add your variations to suit your own taste buds. The dish takes no more than 10 minutes. Of course, vary your quantities according to how many servings are required.

You will need:
Your usual salad ingredients,
Lettuce
Cucumber
Tomatoes
Red onion
Grated carrot
Any other salad ingredients you wish – it is that simple!

For the Shrimp Cocktail:
1-2 bags frozen, cooked salad shrimp (small-medium size)
2-4 spoons of mayonnaise
½ small can of tomato paste
Lemon juice to taste
3-4 drops of Tabasco sauce
Salt and pepper

To thaw the shrimp: Remove from packaging and place in cold water for a few moments. When the shrimp is soft to touch, they are ready to be mixed into the dressing.

To make the dressing: In a large bowl, mix the mayonnaise, tomato paste, lemon juice, tabasco sauce, salt and pepper. Your dressing should be a nice pink color (If you want it darker, simply add more tomato paste. Likewise if you want it lighter, just add more mayonnaise.) Next, combine the shrimp with the dressing and mix through.

All that is left to do is to spoon the shrimp cocktail on top of your salad and enjoy.
There is no need for additional dressing. Easy, healthy and very tasty!
