Since joining experts-column this is my second article and hope you people like it. I have decided to write about cooking one of my favorite subjects. Today I shall be writing about a dish which is equally popular among the people whether they live in USA, Europe or Asia especially among the people of South Asia. The dish is locally known as coal fumed chicken and is also known as smoked chicken. The dish is quite easy to cook and very delicious.
The ingredients for the dish are chicken about two kilograms, soya sauce six table spoons, black pepper one table spoon, raisin sauce two table spoon, vinegar two table spoons, minced green onion one, minced ginger 1 table spoon, salt to taste, aluminum foil and coal about 1 inch long. The ingredients can be altered depending on one’s taste if you like spicy foods the quantity of ingredients can be increased or reduced if you like less spicy food.
The cooking method is that first add all the ingredients into chicken and marinate it overnight. After the chicken has been marinated then cook it in a pot until done. You can also use an oven or a stove in case you do not have an oven. Most modern ovens come with instructions on how long to cook a chicken and these can be used. When the chicken has been cooked give it smoke for smell and taste. Place an aluminum foil in the pot which contains the cooked chicken and heat the coal until it is red hot. Then place the coal on the foil for about one minute. Then remove the coal and the foil. Now the smoked chicken has been cooked and ready to serve. You can serve the dish with rice or with naan or home cooked chapatti.
