Today I am writing about another chicken dish which is very popular in Pakistan. In fact the dish is liked throughout the Asia and especially in the India, Bangladesh and countries of the south Asia region. The dish is called coconut curry chicken or simply coconut chicken.
The ingredients for the dish are about 150 milliliter of hot chicken stock, about 25 grams of coconut cream, one table spoon oil, about 800 grams of skinless boneless chicken thigh cut into thin and long strips, 4 fresh spring onions sliced thinly, four table spoon either smooth or crunchy peanut butter juice, a rind of lemon and one fresh red chili chopped in small pieces.
The preparation of the dish is simple, quick and easy. First of all mix together chicken stock and the coconut cream until it dissolves. Then heat oil in a wok and then add chicken into it and cook until it turns golden in color. Then add chopped red chili and sliced spring onion and cook for about two to three minutes. After this add the remaining ingredients. Simmer the food for about five minutes and stir frequently to make sure that the food does not stick to the base of the wok. Now the dish is ready to be served. Take it out in a serving dish and serve it with boiled rice or chapatti.
