Coming home day after day and having to fix a meal for your family or yourself can become quite boring and ordinary. Maybe it is time for a change, or maybe you just want something a little out of the ordinary from your everyday plain American food. Teriyaki chicken, the easy way, is delicious and can actually be quite healthy. The following recipe is designed for a family of four, but can easily be adjusted for any number of dinner guests.
In order to make easy and delicious teriyaki chicken you will need the following ingredients:
-one pound of lean chicken breast cut up into bite sized pieces
-three tablespoons of extra virgin olive oil
-one bottle of your favorite teriyaki sauce
-one 16 ounce bag of frozen vegetables (broccoli, carrots, and cauliflower are recommended)
-one egg
-two and one half cups of white rice
-a dash of garlic (optional)
-a squeeze of lemon (optional)
Heat the olive oil in a large frying pan. Once hot, add the chicken pieces. Lightly brown the chicken pieces until they are almost cooked all the way through on a medium high heat setting. Heat up the vegetables as the package instructs. Also, start boiling the water for the rice that you will cook in the next step.
Once the water is boiling, add the rice, cover, and set off to the side. Scramble the egg until cooked well and chopped up into tiny pieces. This is also to be set to the side. Once the chicken is slightly browned, add the garlic and lemon for taste. Then, you will want to add enough teriyaki sauce to cover the chicken.
Turn the heat to low and allow the chicken to simmer with just a little extra teriyaki sauce to cover the bottom of the frying pan. This allows the chicken to soak up the teriyaki sauce without drying out or becoming too salty.
While the chicken is simmering and once the rice is done, mix the egg, vegetables, and the rice together in a big pot. Once most of the teriyaki sauce is soaked up by the chicken, add the chicken to the rice mixture. Add more teriyaki sauce to the rice according to what you like.
This kind of dish is quick and easy to make any night of the week when you or your family wants something a little different. Even kids should be able to enjoy the sweet and salty taste of this meal.
