A great dish to throw together for the family, or friends. This cheesy baked potato casserole is a treat for anyone who likes their tasty comfort food.
Cheesy Baked Potato Casserole Ingredients.
For this recipe, you're going to need the following ingredients.
1. Five pound-bag of potatoes, any type of potato is adequate.
2. Three cups of grated chedder cheese.
3. Half a cup of butter.
4. Six - Eight strips of bacon, fried and chopped. You can use 1-2 pounds of ground beef, or any other protein you fancy.
5. 1/2 tablespoon of salt, and one tablespoon of black pepper.
6. One tub of Phillidelphia cream cheese.(optional)
How to make Cheesy Baked Potato casserole
The dish starts by making mashed potatoes. Leave the skin on, Wash and then chop the potatoes into cubes, add to a large pot, cover with water and add plenty of salt.
Once they're done, remove from the hob, drain the water and add the potatoes back to the pot. Now mash them up, and add the stick of butter, salt, pepper, and give them another mash. Remember, you don't want the potatoes to be really whipped up, just roughly mashed.
Add two cups of grated cheddar cheese to the potatoes, and mix in until melted. Save the remaining cup of cheese for the topping. Now mix in the tub of Philladelphia cheese to the pot.
Add the bacon, or ground beef to the pot. Remember, you need to fry the ground beef until it's browned, before adding it to the pot.
As you're doing all of this, pre-heat the oven to 350 degrees.
Empty pot contents into an oven dish and sprinkle the remainder cheddar cheese on the top. Use more to cover it, if you like.
Other optional ingredients can be included in this casserole like roasted garlic, Peppers, fresh basil. You don't have to make mashed potatoes for this recipe, you can use sliced instead. Your optional ingredients for this cheesy baked potato casserole are pretty endless, Enjoy!!

Mashed potatoes are a favourite in my house and I get a little bored of them so I'm definately going to try out this recipe - nice to have a little variation.
