Sunday dinner or a special occasion, you could smell the tempting aroma even before you reached her front door.
This is a family tradition for special sunday dinner's.
You will need;
7-8 lb standing beef rib roast or prime rib ( larger if needed)
1/4 cup of white vinegar
1/4 cup of white sugar
2 cooking onions
12 fresh mushrooms.
place meat on a rack in an uncovered roasting pan
fat side up, pour the vinegar slowing over the meat
sprinkle the white sugar and rub in the sides
cook at 300 degrees for about 20 minutes per lb
peel and chop onions in quarters
clean and slice mushrooms.
sautee in a pan in a small amout of veg oil
then toss in with the roast about the last twenty minutes.
when the roast is done put everything on a serving platter
and add water and cornstarch to dripping and make gravy
in the roasting pan add salt and pepper to taste.
peel and boil in water 6-8 potatos, drain
mash with 2 tablespoons of salted butter and 1/4 cup of cream.
Slice the meat and serve with your favorite green vegetable.
you can use gravy mix as a substitute.
Apple pie is a good choice for dessert
I make my crust from tenderflake lard and follow the directions on the package.
using 6-8 apples sliced, some use cooking apples, I prefer macintosh apples
1 tsp cinnamon, 1/4 tsp of nutmeg
1/4 cup brown sugar, this is your pie filling.
just bake at 350 degrees for 45 minutes or until the crust is golden brown.
